Beetroot
The beetroot is most commonly known as a dark red bulbous root vegetable, although it is also available in golden and orange hues. The shape of a beetroot may vary from round to oblong depending on the variety. They can range in size from a golf ball to a grapefruit. The fresh leaves of the beetroot plant can also be cooked – cook in the same manner as spinach. Borshch, the national soup of the Ukraine, is one of the best know beetroot dishes. Beetroot are available all year, with a peak season between June and November.
