Potato – early or new crop
Due to improved cultivation and food transportation early or new potato varieties are now available year-round. The fine-skinned early or new crop potatoes, traditionally harvested in the spring or summer, do not keep as well as their older counterparts. They are generally crisp and waxy and are ideal simply served with butter and parsley. The smaller varieties are sometimes referred to as chats. New potatoes do not keep well, and should be consumed within a few days of purchasing them.
