Potato
It was through famine and necessity that potatoes first gained notoriety in Europe (after being introduced in the 16th century). Consequently they were long considered the food of the poor. Now potatoes enjoy the popularity they deserve (anti-carb movement aside) and are one of the most versatile of all vegetables. Potatoes fall into two main cooking categories according to their moisture content – either floury or waxy. They are also classed by their age – early/new crop potatoes or maincrop/old potatoes.
