Coriander
Also known as ‘cilantro’ in the US and ‘Chinese parsley’ in France coriander is used to flavour dishes in many cuisines from China and South East Asia to South America and Mexico. Dried coriander seeds are also used in many dishes, either whole or ground. The leaves, roots and stems are used to flavour Asian curries, seafood and vegetable accompaniments. Store in the fridge, with roots in cold water and a plastic bag over the leaves. Wash carefully before use to remove grit.
